Holder of the title Ice Cream World Champion 2008. Hailing from Monte di Procida, his roots in the family patisserie combined with his creative flair allows him to put his expertise to good use, especially when connected to his local region and giving Italo-Napoletan specialities a modern twist.

After having completed his studies, Gaetano, fourth generation of excellence in a line of Neapolitan pastry chefs, carried on the family tradition, developing his inherent talents under the watchful eyes of the most famous masters in the field of Italian Pastry and Chocolate creation.

His passion for the development of new products and creation of new trends allowed him to win many different titles, including the World Cup of Ice Cream in 2008.

 

Today, his art and passion for chocolate are recognised and appreciated, becoming a key point of reference throughout the country.

Over the years, Gaetano has been a consultant for numerous private companies in the sector, and has worked as a consultant with ICAM since 2007, allowing him to further his knowledge and skills in the use of chocolate.

 

With the support of his son Emanuele, who represents the family’s fifth generation in the field, for decades Gaetano has taken forward the family business, Pasticceria Mignano in Monte di Procida.

"Chocolate for me is a living material, it transmits emotions and can even change our state of mind. Depending on the environment, the temperatures and how it is worked, this raw material can change behavior; for this reason it becomes important to know it and work it with passion to transmit the right sensations also to our customers."
